Ingredients:
- 2 (12 oz / 340g) Ribeye steaks, 1.5 inches thick
- 1 tbsp (15ml) Avocado oil
- 1 tbsp (15g) Kosher salt
- 1 tsp (2g) Coarse black pepper
- 3 tbsp (42g) Unsalted butter
- 3 cloves (9g) Garlic, smashed
- 2 sprigs (4g) Fresh rosemary
- 2 sprigs (4g) Fresh thyme
Instructions:
- Remove steaks from the fridge 30 minutes before cooking to temper the meat.
- Pat every side of the steak aggressively with paper towels to remove surface moisture.
- Generously coat all sides and edges of the steaks with kosher salt and coarse black pepper.
- Set a cast iron skillet over high heat and add avocado oil; heat until the oil begins to shimmer and barely smoke.
- Carefully lay steaks in the pan, pressing down slightly for full surface contact. Cook undisturbed for 3-4 minutes per side until a deep mahogany crust forms.
- Lower heat to medium. Toss in the unsalted butter, smashed garlic, rosemary, and thyme.
- Once the butter foams and smells nutty, tilt the pan and spoon the aromatic butter over the steaks continuously to baste.
- Remove steaks from the pan and let them rest for 5-10 minutes before slicing to allow juices to redistribute.
