Ingredients:

  • 8 ears of fresh sweet corn, shucked
  • 4 tbsp unsalted butter, melted
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tbsp fresh lime juice
  • 1 tsp smoked paprika

Instructions:

  1. Preheat your grill to medium-high heat (approximately 400°F / 200°C). Ensure the grates are clean and lightly oiled to prevent the kernels from sticking.
  2. Place the shucked corn directly on the grates. Close the lid and grill for 3–5 minutes per side until the kernels turn bright, opaque yellow with mahogany-colored char marks.
  3. During the final 2 minutes of grilling, use a pastry brush to coat each ear with the melted butter mixture.
  4. Remove the corn from the heat and let it rest for 2 minutes to allow internal steam to soften the core.
