Ingredients:
- 8 ears of fresh sweet corn, shucked
- 4 tbsp unsalted butter, melted
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tbsp fresh lime juice
- 1 tsp smoked paprika
Instructions:
- Preheat your grill to medium-high heat (approximately 400°F / 200°C). Ensure the grates are clean and lightly oiled to prevent the kernels from sticking.
- Place the shucked corn directly on the grates. Close the lid and grill for 3–5 minutes per side until the kernels turn bright, opaque yellow with mahogany-colored char marks.
- During the final 2 minutes of grilling, use a pastry brush to coat each ear with the melted butter mixture.
- Remove the corn from the heat and let it rest for 2 minutes to allow internal steam to soften the core.
