Ingredients:

  • 8 oz (225g) Fusilli or Farfalle pasta
  • 1 tsp (5ml) Salt
  • 2 tbsp (30ml) Extra virgin olive oil
  • 1/4 cup (25g) Finely grated Parmesan cheese
  • 1 tsp (3g) Garlic powder
  • 1/2 tsp (1g) Smoked paprika
  • 1/4 tsp (1.5g) Dried oregano
  • 1/2 tsp (3g) Salt
  • 1/4 tsp (1g) Black pepper

Instructions:

  1. Boil a large pot of salted water. Add the pasta and cook for 1-2 minutes less than the package instructions for al dente. Note: This ensures the pasta stays firm
  2. Drain the pasta in a colander and pat it dry thoroughly with a clean kitchen towel.
  3. In a large mixing bowl, whisk together the olive oil, Parmesan cheese, garlic powder, paprika, oregano, salt, and black pepper.
  4. Toss the warm, drained pasta into the seasoning mixture. Stir until every spiral is evenly coated.
  5. Preheat your oven to 400°F (200°C).
  6. Line a rimmed baking sheet with parchment paper.
  7. Spread the pasta in a single layer. Make sure the pieces aren't touching so they roast instead of steam.
  8. Bake for 10-12 minutes until the pasta is mahogany colored and smells toasted.
  9. Remove from the oven and let them cool for 5 minutes to fully harden.
