Ingredients:

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 2 tbsp avocado oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the cubed steak completely dry with paper towels to ensure a proper sear.
  2. In a medium bowl, toss the steak bites with avocado oil, salt, pepper, and garlic powder until evenly coated.
  3. Place a cast iron skillet over medium-high heat until the oil begins to shimmer.
  4. Add steak bites in a single layer (work in batches if necessary). Sear undisturbed for 2 minutes, flip, and sear for another 2 minutes.
  5. Transfer the seared steak bites to a plate immediately.
  6. Lower the burner heat to medium-low and add the butter to the pan.
  7. Once the butter foams, stir in the minced garlic and sauté for 30-60 seconds until fragrant.
  8. Return the steak to the pan and toss for 1 minute until glazed. Garnish with chopped parsley.
