Ingredients:

  • 1 lb ground beef (80/20 blend)
  • 4 oz thick-cut bacon, diced
  • 1 tbsp unsalted butter
  • 6 large eggs
  • 1/2 cup heavy cream
  • 1 tsp sea salt
  • 2 oz shredded cheddar cheese

Instructions:

  1. Place the skillet over medium-high heat. Add the diced bacon and cook until the edges are crisp and the fat has rendered.
  2. Add the ground beef to the bacon fat. Break the meat apart with your spatula, cooking until it is deeply browned and sizzling.
  3. Stir in the butter during the last minute of browning to add a nutty, rich finish.
  4. In a large bowl, combine the eggs and heavy cream. Whisk vigorously until the mixture is a uniform, pale yellow color with no visible streaks of egg white.
  5. Stir the sea salt and cheddar cheese into the egg mixture.
  6. Preheat your oven to 350°F (175°C).
  7. Pour the egg mixture directly over the browned meat in the skillet, stirring gently to ensure the meat is evenly distributed.
  8. Bake for 18–22 minutes until the center is set and the edges have pulled away slightly from the sides of the pan.
