Ingredients:

  • 16 oz Rotini or Fusilli pasta
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 2 cups red bell pepper, finely diced
  • 1 cup English cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 4 oz hard salami, cubed small
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Boil the pasta in salted water until al dente. Drain and toss with 2 tablespoons of olive oil and garlic powder.
  2. Spread the tossed pasta in the air fryer basket and cook at 400°F (200°C) for 8-10 minutes, shaking halfway through, until the edges are golden and slightly toasted.
  3. Combine extra virgin olive oil, apple cider vinegar, lemon juice, minced garlic, oregano, salt, and pepper in a jar. Shake vigorously for 30 seconds until emulsified.
  4. Place the warm, crispy pasta into a large bowl and immediately pour half of the dressing over the pasta to allow absorption.
  5. Fold in the diced red bell peppers, cucumbers, red onion, cherry tomatoes, black olives, cubed salami, crumbled feta, and chopped parsley.
  6. Pour the remaining dressing over the salad and toss gently to combine.
