Ingredients:
- 16 oz Rotini or Fusilli pasta
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 2 cups red bell pepper, finely diced
- 1 cup English cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 4 oz hard salami, cubed small
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/2 cup extra virgin olive oil
- 3 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Boil the pasta in salted water until al dente. Drain and toss with 2 tablespoons of olive oil and garlic powder.
- Spread the tossed pasta in the air fryer basket and cook at 400°F (200°C) for 8-10 minutes, shaking halfway through, until the edges are golden and slightly toasted.
- Combine extra virgin olive oil, apple cider vinegar, lemon juice, minced garlic, oregano, salt, and pepper in a jar. Shake vigorously for 30 seconds until emulsified.
- Place the warm, crispy pasta into a large bowl and immediately pour half of the dressing over the pasta to allow absorption.
- Fold in the diced red bell peppers, cucumbers, red onion, cherry tomatoes, black olives, cubed salami, crumbled feta, and chopped parsley.
- Pour the remaining dressing over the salad and toss gently to combine.
