Ingredients:
- 1.5 cups (180g) graham cracker crumbs
- 6 tbsp (85g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 16 oz (450g) full-fat cream cheese, softened to room temperature
- 1 cup (250g) creamy peanut butter
- 1 cup (120g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 cup (240ml) heavy whipping cream, chilled
- 8 oz (225g) semi-sweet chocolate chips
- 0.5 cup (120ml) heavy whipping cream
Instructions:
- Combine graham cracker crumbs, melted butter, and sugar in a bowl until the mixture resembles wet sand.
- Line an 8x8 inch pan with parchment paper, leaving an overhang on the sides for easy removal.
- Press the mixture firmly into the bottom of the pan using the bottom of a measuring cup until it is flat and compact.
- Place the pan in the freezer for 10 minutes to set while preparing the filling.
- In a large bowl, beat the softened cream cheese and peanut butter together until completely smooth and no streaks remain.
- Add powdered sugar and vanilla extract, mixing on low speed until incorporated.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the peanut butter mixture using a spatula, taking care not to overmix.
- Spread the filling evenly over the chilled crust, smoothing the top with a spatula.
- Place chocolate chips in a microwave-safe bowl and pour the heavy cream over the top.
- Microwave in 30-second intervals, stirring in between, until the mixture is glossy and smooth.
- Pour the warm ganache over the cheesecake layer and tilt the pan to spread it evenly.
- Chill the bars in the refrigerator for 4 hours before slicing and serving.
