Ingredients:

  • 1.5 cups (180g) graham cracker crumbs
  • 6 tbsp (85g) unsalted butter, melted
  • 2 tbsp (25g) granulated sugar
  • 16 oz (450g) full-fat cream cheese, softened to room temperature
  • 1 cup (250g) creamy peanut butter
  • 1 cup (120g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 1 cup (240ml) heavy whipping cream, chilled
  • 8 oz (225g) semi-sweet chocolate chips
  • 0.5 cup (120ml) heavy whipping cream

Instructions:

  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl until the mixture resembles wet sand.
  2. Line an 8x8 inch pan with parchment paper, leaving an overhang on the sides for easy removal.
  3. Press the mixture firmly into the bottom of the pan using the bottom of a measuring cup until it is flat and compact.
  4. Place the pan in the freezer for 10 minutes to set while preparing the filling.
  5. In a large bowl, beat the softened cream cheese and peanut butter together until completely smooth and no streaks remain.
  6. Add powdered sugar and vanilla extract, mixing on low speed until incorporated.
  7. In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the peanut butter mixture using a spatula, taking care not to overmix.
  9. Spread the filling evenly over the chilled crust, smoothing the top with a spatula.
  10. Place chocolate chips in a microwave-safe bowl and pour the heavy cream over the top.
  11. Microwave in 30-second intervals, stirring in between, until the mixture is glossy and smooth.
  12. Pour the warm ganache over the cheesecake layer and tilt the pan to spread it evenly.
  13. Chill the bars in the refrigerator for 4 hours before slicing and serving.
