Ingredients:

  • 1 lb lean ground turkey or 93% lean ground beef
  • 1/2 cup almond flour
  • 1 large egg, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 8 oz mini mozzarella pearls
  • 1 tsp dried oregano
  • 2-3 cups marinara sauce

Instructions:

  1. In a large bowl, combine the lean ground meat, almond flour, egg, Parmesan, garlic, parsley, salt, pepper, and onion powder. Mix by hand until just combined; do not overwork the meat.
  2. Scoop approximately 2 tablespoons of the mixture and roll it into a ball. Use your thumb to create a deep indentation in the center.
  3. Place one mozzarella pearl (tossed with optional oregano) inside the indentation, then gently fold the meat over the top and roll between your palms until the cheese is completely encased with no cracks.
  4. Cook using one of three methods: Oven (400°F for 18-20 minutes on parchment), Air Fryer (375°F for 10-12 minutes), or Crockpot (sear for 2 minutes per side then simmer in marinara on LOW for 4-6 hours or HIGH for 3 hours).
  5. Remove from heat when the internal temperature reaches 165°F (74°C) and let the meatballs rest for 5 minutes before serving.
