Ingredients:

  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp extra virgin olive oil

Instructions:

  1. Pat the chicken breasts completely dry with paper towels.
  2. In a small bowl, combine the smoked paprika, garlic powder, onion powder, oregano, sea salt, and black pepper. Coat the chicken evenly on all sides, pressing the spices into the meat.
  3. Set the Instant Pot to 'Sauté' and add the olive oil. Once hot, sear the chicken for 2 minutes per side until a light golden crust forms.
  4. Remove the chicken from the pot, pour in the chicken broth, and use a wooden spoon to scrape the brown bits (fond) off the bottom.
  5. Return the chicken to the pot. Lock the lid and set to Manual/Pressure Cook (High) for 10 minutes.
  6. Allow the pot to undergo a Natural Release for 5-10 minutes before venting the remaining steam manually.
  7. Remove the chicken and let it rest on a plate for 5 minutes before serving.
