Ingredients:
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1.5 lbs boneless, skinless chicken breasts
- 1/2 cup low-sodium chicken broth
- 1 tbsp extra virgin olive oil
Instructions:
- Pat the chicken breasts completely dry with paper towels.
- In a small bowl, combine the smoked paprika, garlic powder, onion powder, oregano, sea salt, and black pepper. Coat the chicken evenly on all sides, pressing the spices into the meat.
- Set the Instant Pot to 'Sauté' and add the olive oil. Once hot, sear the chicken for 2 minutes per side until a light golden crust forms.
- Remove the chicken from the pot, pour in the chicken broth, and use a wooden spoon to scrape the brown bits (fond) off the bottom.
- Return the chicken to the pot. Lock the lid and set to Manual/Pressure Cook (High) for 10 minutes.
- Allow the pot to undergo a Natural Release for 5-10 minutes before venting the remaining steam manually.
- Remove the chicken and let it rest on a plate for 5 minutes before serving.
