Ingredients:
- 12 oz (340g) whole wheat spaghetti
- 1 tbsp (15ml) sea salt
- 2 cups (300g) cherry tomatoes, halved
- 3 tbsp (42g) extra virgin olive oil
- 4 cloves (12g) garlic, thinly sliced
- 1/2 tsp (3g) red pepper flakes
- 1/2 cup (120ml) reserved pasta water
- 1/2 cup (50g) fresh basil leaves, torn by hand
- 1/4 cup (25g) Pecorino Romano, grated
- 1/2 cup (60g) mini mozzarella pearls
- salt and black pepper to taste
Instructions:
- Bring a large pot of salted water to a rolling boil.
- Add pasta and cook according to package directions, but remove it 2 minutes before the al dente time.
- Before draining the pasta, scoop out at least 1 cup of the cloudy pasta water and set aside.
- Heat olive oil in a large skillet over medium-high heat until it shimmers.
- Add sliced garlic and red pepper flakes; sauté for about 60 seconds until fragrant and pale gold.
- Toss in halved cherry tomatoes and increase heat to high; sauté for 3–5 minutes without stirring too often until tomatoes burst and release their juices.
- Add the reserved pasta water and the undercooked pasta to the skillet, tossing constantly until the sauce emulsifies and coats the pasta.
- Remove the pan from the heat and stir in the torn basil, grated Pecorino Romano, and mozzarella pearls. Season with salt and black pepper to taste.
