Ingredients:

  • 2 cups (480ml) whole milk
  • 1 cup (245g) plain Greek yogurt
  • 1/3 cup (65g) granulated sugar
  • 2 1/4 tsp (7g) unflavored powdered gelatin
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) salt
  • 1 1/2 cups (225g) fresh mixed berries
  • 2 tbsp (30ml) honey
  • 1 tsp (5ml) fresh lemon juice
  • 1 sprig fresh mint

Instructions:

  1. Place 1/4 cup (60ml) of the cold milk into a small bowl and sprinkle the powdered gelatin evenly over the surface. Let it sit undisturbed for 5 to 10 minutes to bloom.
  2. Pour the remaining milk, sugar, and salt into a saucepan over medium heat. Stir constantly until the sugar is fully dissolved and the milk is steaming but not boiling.
  3. Remove the saucepan from heat and whisk in the bloomed gelatin and vanilla extract until the mixture is completely clear and liquid.
  4. Transfer the Greek yogurt to a mixing bowl. Slowly pour the warm milk mixture into the yogurt, whisking gently until the color is uniform and the texture is velvety.
  5. Pour the mixture into 6 ramekins. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, until firmly set.
  6. Prepare the topping by tossing mixed berries with honey and lemon juice. Spoon over the set panna cotta and garnish with a mint sprig before serving.
