Ingredients:
- 2 cups (480ml) whole milk
- 1 cup (245g) plain Greek yogurt
- 1/3 cup (65g) granulated sugar
- 2 1/4 tsp (7g) unflavored powdered gelatin
- 1 tsp (5ml) pure vanilla extract
- 1/4 tsp (1.5g) salt
- 1 1/2 cups (225g) fresh mixed berries
- 2 tbsp (30ml) honey
- 1 tsp (5ml) fresh lemon juice
- 1 sprig fresh mint
Instructions:
- Place 1/4 cup (60ml) of the cold milk into a small bowl and sprinkle the powdered gelatin evenly over the surface. Let it sit undisturbed for 5 to 10 minutes to bloom.
- Pour the remaining milk, sugar, and salt into a saucepan over medium heat. Stir constantly until the sugar is fully dissolved and the milk is steaming but not boiling.
- Remove the saucepan from heat and whisk in the bloomed gelatin and vanilla extract until the mixture is completely clear and liquid.
- Transfer the Greek yogurt to a mixing bowl. Slowly pour the warm milk mixture into the yogurt, whisking gently until the color is uniform and the texture is velvety.
- Pour the mixture into 6 ramekins. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, until firmly set.
- Prepare the topping by tossing mixed berries with honey and lemon juice. Spoon over the set panna cotta and garnish with a mint sprig before serving.
