Ingredients:

  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (100g) brown sugar, packed
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 4 tbsp (57g) unsalted butter, cold and cubed
  • 2 cups (250g) all-purpose flour
  • 1 tsp (4g) baking powder
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (3g) salt
  • 1/2 cup (115g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 cup (245g) plain Greek yogurt, room temperature

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch square pan and line it with parchment paper, leaving a slight overhang on the sides.
  2. In a medium bowl, whisk together the 1/2 cup flour, brown sugar, cinnamon, and 1/4 tsp salt. Use fingers or a fork to rub cold, cubed butter into the dry ingredients until the mixture looks like coarse wet sand. Refrigerate until needed.
  3. In a large bowl, cream the softened butter and granulated sugar together until pale and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the 2 cups flour, baking powder, baking soda, and 1/2 tsp salt.
  6. Slowly alternate adding the dry ingredients and the Greek yogurt into the butter mixture, stirring until just combined.
  7. Pour the batter into the prepared pan and spread evenly. Sprinkle the chilled cinnamon streusel evenly over the top.
  8. Bake for 35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before slicing.
