Ingredients:
- 1/2 cup (60g) all-purpose flour
- 1/2 cup (100g) brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 4 tbsp (57g) unsalted butter, cold and cubed
- 2 cups (250g) all-purpose flour
- 1 tsp (4g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1/2 cup (115g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (245g) plain Greek yogurt, room temperature
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9-inch square pan and line it with parchment paper, leaving a slight overhang on the sides.
- In a medium bowl, whisk together the 1/2 cup flour, brown sugar, cinnamon, and 1/4 tsp salt. Use fingers or a fork to rub cold, cubed butter into the dry ingredients until the mixture looks like coarse wet sand. Refrigerate until needed.
- In a large bowl, cream the softened butter and granulated sugar together until pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the 2 cups flour, baking powder, baking soda, and 1/2 tsp salt.
- Slowly alternate adding the dry ingredients and the Greek yogurt into the butter mixture, stirring until just combined.
- Pour the batter into the prepared pan and spread evenly. Sprinkle the chilled cinnamon streusel evenly over the top.
- Bake for 35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before slicing.
