Ingredients:
- 3 large overripe bananas, mashed (approx. 1 cup / 225g)
- 1/2 cup (120g) plain Greek yogurt
- 1/2 cup (115g) unsalted butter, melted and cooled
- 3/4 cup (150g) packed brown sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1/2 cup (60g) semi-sweet chocolate chips
- 1/2 cup (60g) chopped walnuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- In a large bowl, mash the bananas until smooth. Whisk in the melted butter, brown sugar, egg, vanilla, and Greek yogurt until the batter is a uniform, creamy tan color.
- Sift the flour, baking soda, and salt directly into the wet mixture. Using a spatula, fold the ingredients together until no more white flour streaks are visible. Fold in chocolate chips or walnuts.
- Pour the batter into the prepared pan. Bake for 50–60 minutes, or until the top is deep mahogany brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
