Ingredients:

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp dried parsley
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 tsp nutmeg

Instructions:

  1. Pat the steak cubes completely dry with paper towels. Season generously with salt and pepper.
  2. Heat vegetable oil in a 12-inch cast iron skillet over medium-high heat until it just begins to smoke.
  3. Add steak in a single layer and sear for 2-3 minutes per side until a deep mahogany crust forms. Remove steak from the pan and set aside on a plate.
  4. Lower the heat to medium. Melt the butter in the same skillet.
  5. Once bubbling, add the minced garlic and parsley. Sauté for about 1 minute until the garlic is fragrant.
  6. Pour in the heavy cream and whisk constantly, scraping the bottom of the pan to incorporate the caramelized brown bits. Simmer for 2-3 minutes until the sauce slightly thickens.
  7. Stir in the Parmesan cheese and nutmeg until completely melted and glossy.
  8. Return the steak bites to the pan, tossing them for 1 minute to coat them in the garlic Parmesan cream sauce.
