Ingredients:
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp dried parsley
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/4 tsp nutmeg
Instructions:
- Pat the steak cubes completely dry with paper towels. Season generously with salt and pepper.
- Heat vegetable oil in a 12-inch cast iron skillet over medium-high heat until it just begins to smoke.
- Add steak in a single layer and sear for 2-3 minutes per side until a deep mahogany crust forms. Remove steak from the pan and set aside on a plate.
- Lower the heat to medium. Melt the butter in the same skillet.
- Once bubbling, add the minced garlic and parsley. Sauté for about 1 minute until the garlic is fragrant.
- Pour in the heavy cream and whisk constantly, scraping the bottom of the pan to incorporate the caramelized brown bits. Simmer for 2-3 minutes until the sauce slightly thickens.
- Stir in the Parmesan cheese and nutmeg until completely melted and glossy.
- Return the steak bites to the pan, tossing them for 1 minute to coat them in the garlic Parmesan cream sauce.
