Ingredients:
- 1 lb (450g) Mixed Dried Fruit
- 1/2 cup (75g) Glacé Cherries, halved
- 1/2 cup (60ml) Brandy
- 1 tbsp (15ml) Orange extract
- 1 cup (225g) Unsalted Butter, softened
- 1 cup (200g) Dark Brown Sugar, packed
- 3 Large Eggs
- 2 cups (250g) All-purpose Flour
- 1 tsp (5g) Baking Powder
- 1 tbsp (8g) Mixed Spice
- 1/2 tsp (3g) Salt
- 8 oz (225g) Marzipan
- 1 lb (450g) White Fondant Icing
- 2 tbsp (30ml) Warm water
Instructions:
- Combine the mixed dried fruits, glacé cherries, and brandy in a sealed container. Let soak for at least 24 hours.
- Cream the softened butter and brown sugar until pale and fluffy. Beat in the eggs one at a time until fully incorporated.
- Sift and fold in the all-purpose flour, baking powder, mixed spice, and salt using a spatula until just combined.
- Toss the soaked fruit in one tablespoon of the recipe flour, then gently fold the fruit into the cake batter.
- Spread the mixture evenly into a lined 9x13 inch baking pan. Bake at 300°F (150°C) for 180 minutes or until a skewer comes out clean.
- Once completely cool, press rolled marzipan onto the top of the cake, then drape and smooth the fondant icing over the marzipan using warm water for smoothing.
