Ingredients:
- 1 lb English Cucumber, diced into ½-inch pieces
- 1 pint cherry tomatoes, halved or quartered
- 1/4 cup red onion, finely diced
- 2 tbsp fresh parsley, chopped
- 3 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp honey
- 1/2 tsp dried oregano
- 1/2 tsp fine sea salt
- 1/4 tsp black pepper
Instructions:
- Dice the English cucumber into uniform ½-inch cubes. Halve the cherry tomatoes and finely mince the red onion. Place all prepared produce into a large mixing bowl.
- In a small jar or bowl, combine the olive oil, red wine vinegar, honey, dried oregano, salt, and pepper. Whisk vigorously or shake the jar for 30 seconds until the mixture is emulsified and slightly thickened.
- Drizzle the dressing over the cucumber and tomato mixture. Gently toss with a large spoon or spatula until evenly coated, then fold in the fresh parsley.
