Ingredients:

  • 1 lb chicken breast, cubed into 1-inch pieces
  • 2 cups broccoli florets
  • 1 red bell pepper, chopped into chunks
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups romaine lettuce, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp toasted sunflower seeds
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1 clove garlic, minced
  • salt and pepper, to taste (for dressing)

Instructions:

  1. Toss the cubed chicken, broccoli, and bell peppers in a bowl with 2 tablespoons of olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  2. Place the mixture in the air fryer basket in a single layer and cook at 400°F (200°C) for 12–13 minutes, shaking the basket halfway through.
  3. While the base is cooking, whisk together 3 tablespoons of olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper in a small bowl until emulsified.
  4. In a large mixing bowl, combine the chopped romaine lettuce and thinly sliced red onion.
  5. Top the greens with the hot air-fried chicken and vegetables.
  6. Sprinkle with crumbled feta and toasted sunflower seeds, then drizzle with the dressing immediately before serving.
