Ingredients:
- 1 lb chicken breast, cubed into 1-inch pieces
- 2 cups broccoli florets
- 1 red bell pepper, chopped into chunks
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups romaine lettuce, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp toasted sunflower seeds
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp dijon mustard
- 1 clove garlic, minced
- salt and pepper, to taste (for dressing)
Instructions:
- Toss the cubed chicken, broccoli, and bell peppers in a bowl with 2 tablespoons of olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Place the mixture in the air fryer basket in a single layer and cook at 400°F (200°C) for 12–13 minutes, shaking the basket halfway through.
- While the base is cooking, whisk together 3 tablespoons of olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper in a small bowl until emulsified.
- In a large mixing bowl, combine the chopped romaine lettuce and thinly sliced red onion.
- Top the greens with the hot air-fried chicken and vegetables.
- Sprinkle with crumbled feta and toasted sunflower seeds, then drizzle with the dressing immediately before serving.
