Ingredients:
- 2 large Granny Smith apples (approx. 1 lb / 450g)
- 1 tbsp lemon juice
- 1/4 cup all-purpose flour (for dusting)
- 1 cup all-purpose flour
- 2 tbsp cornstarch
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbsp granulated sugar
- 1 cup cold milk
- 1 tsp vanilla extract
- 3 tbsp granulated sugar
- 1 tsp ground cinnamon
Instructions:
- Core the apples and slice them into rings roughly 1/4 inch (6mm) thick.
- Toss the apple rings in lemon juice to prevent browning, pat each ring thoroughly with a paper towel to remove surface moisture, and toss in the dusting flour until lightly coated.
- In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and 1 tbsp granulated sugar.
- Slowly stir in the cold milk and vanilla extract until the mixture is smooth and thick enough to coat a spoon.
- Heat 2 inches (5cm) of neutral oil in a skillet or deep fryer to 350°F (175°C).
- Dip each floured ring into the batter, allowing excess to drip off, and fry for 2-3 minutes per side until golden brown.
- Remove the rings with tongs and place them briefly on a wire rack to drain.
- While still hot, immediately toss the rings in the cinnamon-sugar mixture until evenly coated.
