Ingredients:

  • 2 large Granny Smith apples (approx. 1 lb / 450g)
  • 1 tbsp lemon juice
  • 1/4 cup all-purpose flour (for dusting)
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp granulated sugar
  • 1 cup cold milk
  • 1 tsp vanilla extract
  • 3 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions:

  1. Core the apples and slice them into rings roughly 1/4 inch (6mm) thick.
  2. Toss the apple rings in lemon juice to prevent browning, pat each ring thoroughly with a paper towel to remove surface moisture, and toss in the dusting flour until lightly coated.
  3. In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and 1 tbsp granulated sugar.
  4. Slowly stir in the cold milk and vanilla extract until the mixture is smooth and thick enough to coat a spoon.
  5. Heat 2 inches (5cm) of neutral oil in a skillet or deep fryer to 350°F (175°C).
  6. Dip each floured ring into the batter, allowing excess to drip off, and fry for 2-3 minutes per side until golden brown.
  7. Remove the rings with tongs and place them briefly on a wire rack to drain.
  8. While still hot, immediately toss the rings in the cinnamon-sugar mixture until evenly coated.
