Ingredients:

  • 3 lbs chicken wings
  • 1 tbsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup unsalted butter, melted
  • 1/3 cup hot sauce
  • 1 tbsp honey
  • 1/4 tsp cayenne pepper

Instructions:

  1. Pat each wing bone-dry with paper towels to remove surface moisture.
  2. In a large bowl, toss the wings with baking powder, salt, pepper, and garlic powder until evenly coated.
  3. Line a baking sheet with foil, place a wire cooling rack on top, and arrange wings in a single layer.
  4. Preheat oven to 425°F (218°C). Bake for 40–45 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C) and skin is golden brown.
  5. Whisk melted butter, hot sauce, honey, and cayenne pepper in a large bowl until emulsified.
  6. Immediately transfer hot wings from the oven into the sauce bowl and toss to coat.
