Ingredients:

  • 1 lb (450g) Rotini or Fusilli pasta
  • 1 tbsp (15g) salt
  • 1 cup (235g) mayonnaise
  • 2 tbsp (30ml) apple cider vinegar
  • 1 tbsp (15g) granulated sugar
  • 1/2 tsp (3g) garlic powder
  • 1/2 tsp (3g) onion powder
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1 cup (120g) celery, finely diced
  • 1/2 cup (75g) red onion, finely minced
  • 1 cup (150g) red bell pepper, diced
  • 1/2 cup (60g) carrots, shredded or finely diced
  • 1/4 cup (15g) fresh parsley, chopped

Instructions:

  1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente. Immediately drain in a colander and rinse with cold water until the noodles are cool to the touch.
  2. In a small bowl, combine the mayonnaise, apple cider vinegar, sugar, garlic powder, onion powder, salt, and pepper. Whisk vigorously until the sugar has dissolved and the mixture is smooth.
  3. Place the cooled pasta into a large mixing bowl. Add the diced celery, red onion, bell pepper, carrots, and parsley.
  4. Pour the creamy dressing over the pasta and vegetables. Use a large spoon or spatula to gently fold the ingredients together until every piece of pasta is evenly coated.
