Ingredients:
- 1 lb (450g) Rotini or Fusilli pasta
- 1 tbsp (15g) salt
- 1 cup (235g) mayonnaise
- 2 tbsp (30ml) apple cider vinegar
- 1 tbsp (15g) granulated sugar
- 1/2 tsp (3g) garlic powder
- 1/2 tsp (3g) onion powder
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1 cup (120g) celery, finely diced
- 1/2 cup (75g) red onion, finely minced
- 1 cup (150g) red bell pepper, diced
- 1/2 cup (60g) carrots, shredded or finely diced
- 1/4 cup (15g) fresh parsley, chopped
Instructions:
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente. Immediately drain in a colander and rinse with cold water until the noodles are cool to the touch.
- In a small bowl, combine the mayonnaise, apple cider vinegar, sugar, garlic powder, onion powder, salt, and pepper. Whisk vigorously until the sugar has dissolved and the mixture is smooth.
- Place the cooled pasta into a large mixing bowl. Add the diced celery, red onion, bell pepper, carrots, and parsley.
- Pour the creamy dressing over the pasta and vegetables. Use a large spoon or spatula to gently fold the ingredients together until every piece of pasta is evenly coated.
