Ingredients:
- 1.5 cups (350g) Plain Greek yogurt
- 1 tbsp (15ml) Extra virgin olive oil
- 3 cloves (15g) Fresh garlic
- 2 tbsp (30ml) Freshly squeezed lemon juice
- 0.5 tsp (3g) Kosher salt
- 0.25 tsp (1g) Freshly cracked black pepper
- 1-2 tbsp (15-30ml) Cold water
Instructions:
- Using a microplane or a garlic press, grate the garlic cloves directly into the mixing bowl. If using a knife, mince the garlic and use the flat side of the blade to mash it into a smooth paste with a pinch of the salt.
- Add the Greek yogurt, lemon juice, and olive oil to the garlic paste. Use a whisk to stir in a circular motion until the oil is fully incorporated and the mixture looks glossy.
- Whisk in the remaining salt and black pepper. If using as a drizzle, slowly whisk in cold water one tablespoon at a time until the sauce reaches a pourable, ribbons-like consistency.
