Ingredients:
- 3 large overripe bananas, mashed (approx. 1 ½ cups / 340g)
- ½ cup (120g) plain Greek yogurt
- ½ cup (115g) unsalted butter, melted and cooled
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- ½ cup (100g) light brown sugar, packed
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 175°C. Grease a 9x5 inch loaf pan or line it with parchment paper.
- Mash the overripe bananas with a fork until smooth, leaving a few small lumps for texture.
- Whisk in the melted butter, Greek yogurt, egg, vanilla extract, and brown sugar until the mixture is velvety and combined.
- In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gently fold the dry ingredients into the wet batter using a spatula, stopping as soon as no streaks of flour remain.
- Fold in 120g (about 3/4 cup) of the chocolate chips.
- Pour the batter into the prepared pan and smooth the top. Sprinkle the remaining 50g of chocolate chips across the surface.
- Bake for 50–60 minutes until a toothpick inserted into the center comes out clean or just a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
