Ingredients:

  • 1 lb ground chicken breast
  • 1 large egg, beaten
  • 1/2 cup Panko breadcrumbs
  • 1 medium zucchini, grated
  • 1 ear fresh corn, kernels cut from cob
  • 1/2 medium red bell pepper, finely diced
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions:

  1. Grate the zucchini using the large holes of a box grater. Place the grated zucchini in a kitchen towel and squeeze firmly to remove excess water.
  2. In a large mixing bowl, combine the ground chicken, squeezed zucchini, corn kernels, diced bell pepper, green onions, garlic, beaten egg, Panko, salt, and pepper.
  3. Mix with hands until just combined; do not overwork the meat. Shape into 6 equal patties, approximately 3/4 inch thick.
  4. Heat olive oil in an oven-safe non-stick skillet over medium-high heat. Sear patties for 3–4 minutes per side until a golden-brown crust forms.
  5. Transfer the skillet to a preheated oven at 375°F (190°C) for 3–5 minutes to ensure the centers reach an internal temperature of 165°F (74°C).
