Ingredients:

  • 1 lb (450g) 80/20 ground beef
  • 1 tsp (6g) sea salt
  • 2 tbsp (28g) unsalted butter
  • 1 cup (113g) shredded sharp cheddar cheese

Instructions:

  1. Place a 12-inch cast iron skillet over medium-high heat. Add the ground beef and spread it evenly across the pan, searing undisturbed for 3-4 minutes until a deep mahogany crust forms.
  2. Break the meat apart with a spatula and continue cooking until no pink remains and the edges are crispy.
  3. Reduce heat to medium. Stir in the sea salt and unsalted butter, stirring constantly for 1-2 minutes as the butter foams and glazes the beef.
  4. Spread the beef into an even layer and sprinkle the shredded sharp cheddar cheese across the top.
  5. Cover the pan with a lid for 60-90 seconds until the cheese is fully melted and bubbling, then remove from heat immediately.
