Ingredients:

  • 1 lb ground beef (80/20)
  • 10 large eggs
  • 1 tsp sea salt
  • 2 tbsp unsalted butter, melted

Instructions:

  1. Place the ground beef in a skillet over medium-high heat. Cook until mahogany-colored and fully browned, breaking the meat into very small crumbles with a spatula. Drain excess liquid.
  2. Crack the eggs into a large mixing bowl, add sea salt, and whisk vigorously until the yolks and whites are completely integrated.
  3. Preheat oven to 350°F (175°C) and brush a 12-cup muffin tin generously with melted butter.
  4. Divide the browned beef evenly among the 12 muffin cups.
  5. Pour the egg mixture over the beef until each cup is filled approximately 3/4 of the way.
  6. Bake for 20–22 minutes, or until the centers are set and the tops are slightly golden.
