Ingredients:

  • 1 lb lean ground beef (90/10)
  • 1 tbsp unsalted butter
  • 1/2 tsp sea salt
  • 4 oz sharp cheddar cheese, shredded
  • 4 large eggs

Instructions:

  1. Heat the cast iron skillet over medium-high heat until a drop of water sizzles instantly.
  2. Add the butter; once it foams, add the ground beef in a flat layer.
  3. Press the beef down firmly and sear without stirring for 3-4 minutes until a mahogany-colored crust forms.
  4. Break the beef into small crumbles and cook until browned throughout.
  5. Lower the heat to medium and sprinkle the shredded cheddar cheese evenly over the beef.
  6. Cover the pan with a lid for 60 seconds until the cheese is fully melted and velvety.
  7. Create four small wells in the beef mixture using your spatula.
  8. Crack one egg into each well and season each egg with a pinch of salt.
  9. Cover the pan again and cook for 3-5 minutes, or until the egg whites are set but the yolks remain jammy.
