Ingredients:
- 1 lb lean ground beef (90/10)
- 1 tbsp unsalted butter
- 1/2 tsp sea salt
- 4 oz sharp cheddar cheese, shredded
- 4 large eggs
Instructions:
- Heat the cast iron skillet over medium-high heat until a drop of water sizzles instantly.
- Add the butter; once it foams, add the ground beef in a flat layer.
- Press the beef down firmly and sear without stirring for 3-4 minutes until a mahogany-colored crust forms.
- Break the beef into small crumbles and cook until browned throughout.
- Lower the heat to medium and sprinkle the shredded cheddar cheese evenly over the beef.
- Cover the pan with a lid for 60 seconds until the cheese is fully melted and velvety.
- Create four small wells in the beef mixture using your spatula.
- Crack one egg into each well and season each egg with a pinch of salt.
- Cover the pan again and cook for 3-5 minutes, or until the egg whites are set but the yolks remain jammy.
