Ingredients:

  • 1 lb flank steak, sliced thin against the grain
  • 1 tbsp cornstarch
  • 1 tbsp low-sodium soy sauce
  • 1 tsp toasted sesame oil
  • 1/2 cup beef broth
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp cornstarch
  • 1/2 tsp black pepper
  • 4 cups fresh broccoli florets
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup water

Instructions:

  1. Identify the direction of the muscle fibers in the flank steak and slice perpendicularly against the grain into thin ribbons. Toss the beef with 1 tbsp cornstarch, 1 tbsp soy sauce, and 1 tsp sesame oil. Let marinate for 10 minutes.
  2. In a small bowl, whisk together the beef broth, 1/4 cup soy sauce, honey, 1 tbsp cornstarch, and black pepper to create the signature sauce.
  3. Heat 1 tbsp of vegetable oil in a wok or large skillet over high heat until it just begins to smoke. Add the beef in a single layer and sear undisturbed for 60 seconds. Toss and cook until browned but still slightly pink. Remove beef from the pan.
  4. Wipe the pan clean, add the remaining 1 tbsp oil, garlic, and ginger. Stir fry for 30 seconds until fragrant. Add the broccoli florets and 1/4 cup water. Cover immediately and steam for 2 minutes.
  5. Remove the lid and pour in the sauce mixture. Stir constantly until the sauce thickens and becomes glossy. Return the beef to the pan, toss to coat thoroughly, and serve immediately.
