Ingredients:

  • 2 pints (600g) cherry tomatoes
  • 3 cloves (15g) garlic, smashed and roughly chopped
  • 1/4 cup (10g) fresh basil, chiffonade
  • 2 tbsp (30ml) extra-virgin olive oil
  • 3 tbsp (45ml) balsamic vinegar
  • 1 tsp (4g) brown sugar
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. Toss the halved cherry tomatoes and smashed garlic directly on the pan.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, brown sugar, salt, and pepper until the sugar is mostly dissolved.
  4. Drizzle the glaze over the tomatoes and toss with a spatula until every tomato is mahogany-coated.
  5. Roast for 15–20 minutes until the skins wrinkle and pop, and the liquid bubbles and thickens into a syrupy consistency.
  6. Remove the pan from the oven and fold in the fresh basil while the tomatoes are still sizzling.
