Ingredients:
- 2 pints (600g) cherry tomatoes
- 3 cloves (15g) garlic, smashed and roughly chopped
- 1/4 cup (10g) fresh basil, chiffonade
- 2 tbsp (30ml) extra-virgin olive oil
- 3 tbsp (45ml) balsamic vinegar
- 1 tsp (4g) brown sugar
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) black pepper
Instructions:
- Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- Toss the halved cherry tomatoes and smashed garlic directly on the pan.
- In a small bowl, whisk together the olive oil, balsamic vinegar, brown sugar, salt, and pepper until the sugar is mostly dissolved.
- Drizzle the glaze over the tomatoes and toss with a spatula until every tomato is mahogany-coated.
- Roast for 15–20 minutes until the skins wrinkle and pop, and the liquid bubbles and thickens into a syrupy consistency.
- Remove the pan from the oven and fold in the fresh basil while the tomatoes are still sizzling.
