Ingredients:
- 1/3 cup balsamic vinegar
- 2 tbsp honey
- 2 tbsp extra virgin olive oil
- 1 tbsp Dijon mustard
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 (6 oz) boneless skinless chicken breasts
- 2 cups cherry tomatoes
- 1 tbsp olive oil
- 1/4 cup fresh parsley, chopped
Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the balsamic vinegar, honey, 2 tablespoons of olive oil, Dijon mustard, minced garlic, dried basil, salt, and pepper until emulsified.
- Lightly grease a 9x13 inch oven-safe baking dish with 1 tablespoon of olive oil.
- Place the chicken breasts in the center of the dish and scatter the cherry tomatoes evenly around the meat.
- Pour the balsamic glaze over the chicken, ensuring the protein is fully coated.
- Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and tomatoes have burst.
- Remove from oven and let the chicken rest in the pan for 5 minutes.
- Garnish with chopped fresh parsley before serving.
