Ingredients:

  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 (6 oz) boneless skinless chicken breasts
  • 2 cups cherry tomatoes
  • 1 tbsp olive oil
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the balsamic vinegar, honey, 2 tablespoons of olive oil, Dijon mustard, minced garlic, dried basil, salt, and pepper until emulsified.
  3. Lightly grease a 9x13 inch oven-safe baking dish with 1 tablespoon of olive oil.
  4. Place the chicken breasts in the center of the dish and scatter the cherry tomatoes evenly around the meat.
  5. Pour the balsamic glaze over the chicken, ensuring the protein is fully coated.
  6. Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and tomatoes have burst.
  7. Remove from oven and let the chicken rest in the pan for 5 minutes.
  8. Garnish with chopped fresh parsley before serving.
