Ingredients:

  • 1 cup (250g) creamy peanut butter
  • ¾ cup (150g) coconut sugar
  • 1 large (50g) room-temperature egg

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a heavy-duty baking sheet with parchment paper.
  2. Combine the peanut butter, sugar, and egg in a mixing bowl. Beat on medium speed for about 2 minutes until the mixture is smooth and creamy.
  3. Scoop about 1 tablespoon of dough and roll it into 1-inch balls. Place them 2 inches apart on the baking sheet.
  4. Press a fork gently into the top of each ball, twist, and press again to create a criss-cross pattern.
  5. Bake for 8–10 minutes until the edges turn deep mahogany-brown while the centers remain slightly soft.
