Gathering the right ingredients is the first step to baking success, and I promise you won’t need anything too exotic. Here’s what you’ll need:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup vegetable oil (or you can substitute with unsweetened applesauce for a lighter version)
- 4 large eggs
- 3 cups grated carrots (about 4–5 medium carrots)
- 1 cup crushed pineapple, drained
- 1 cup chopped walnuts or pecans (optional)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with cooking spray or butter.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix these dry ingredients well.
- In a separate bowl, whisk together the oil, eggs, and vanilla extract until fully combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay!
- Fold in the grated carrots, crushed pineapple, and nuts (if using) until evenly distributed throughout the batter.
- Divide the batter evenly between the two prepared cake pans. Use a spatula to smooth the tops.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and let the cakes cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.
- While the cakes are cooling, prepare your favorite cream cheese frosting to slather in between the layers and on top!
