Gathering the right ingredients is the first step to baking success, and I promise you won’t need anything too exotic. Here’s what you’ll need:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup vegetable oil (or you can substitute with unsweetened applesauce for a lighter version)
  • 4 large eggs
  • 3 cups grated carrots (about 45 medium carrots)
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with cooking spray or butter.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix these dry ingredients well.
  3. In a separate bowl, whisk together the oil, eggs, and vanilla extract until fully combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay!
  5. Fold in the grated carrots, crushed pineapple, and nuts (if using) until evenly distributed throughout the batter.
  6. Divide the batter evenly between the two prepared cake pans. Use a spatula to smooth the tops.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove from the oven and let the cakes cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.
  9. While the cakes are cooling, prepare your favorite cream cheese frosting to slather in between the layers and on top!
