Here’s what you’ll need to make this delightful dish. I always believe in using fresh, quality ingredients, but don’t worry if you have to make a few substitutions based on what you have at home!
- 4 pieces of amberjack fish fillets (about 6 ounces each)
- 1/4 cup olive oil
- 2 tablespoons lemon juice (freshly squeezed is best)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)

Now, let’s get cooking! Follow these simple steps to create a delicious grilled amberjack that your whole family will love.
- Preheat your grill to medium-high heat, around 375°F to 400°F. If you’re using a charcoal grill, make sure the coals are hot and ashy.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper until well combined.
- Place the amberjack fillets in a shallow dish or a resealable bag, and pour the marinade over them. Make sure each fillet is well coated. Let it marinate for at least 15-20 minutes. If you have more time, marinating for an hour is even better!
- Once the grill is ready, lightly oil the grates to prevent sticking. Place the marinated amberjack fillets on the grill, skin-side down if they have skin.
- Grill the fish for about 4-5 minutes per side. You’ll know it’s ready to flip when it releases easily from the grill and has nice grill marks. The fish should be opaque and flake easily with a fork.
- Once cooked, remove the fillets from the grill and let them rest for a couple of minutes before serving. Garnish with fresh parsley for a pop of color and flavor.
