  • 4 pieces of amberjack fish fillets (about 6 ounces each)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice (freshly squeezed is best)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Now, let’s get cooking! Follow these simple steps to create a delicious grilled amberjack that your whole family will love.

  1. Preheat your grill to medium-high heat, around 375°F to 400°F. If you’re using a charcoal grill, make sure the coals are hot and ashy.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper until well combined.
  3. Place the amberjack fillets in a shallow dish or a resealable bag, and pour the marinade over them. Make sure each fillet is well coated. Let it marinate for at least 15-20 minutes. If you have more time, marinating for an hour is even better!
  4. Once the grill is ready, lightly oil the grates to prevent sticking. Place the marinated amberjack fillets on the grill, skin-side down if they have skin.
